Grind the beans just before brewing (fine for espresso, medium for a moka pot). Use about 7–9 grams of coffee per cup. Brew with water at 90–96°C. Extract for 25–30 seconds in an espresso machine; for a moka pot, remove from the heat as soon as it starts to boil. Serve hot with a layer of crema on top.
