Hi, usually pea protein powders are said to lose their potency and values if exposed to heat. I wonder if the values at that temperature will be negatively affected if we add 1 scoop of cream of rice + egg + this pea protein powder and make pancakes? Do you recommend consuming it alone so that its effect is not lost? Thanks
Answer from Torq Nutrition
Hello, Pea protein's bioavailability may decrease slightly when exposed to high heat, but this does not mean that the protein becomes completely ineffective. When cooking, such as pancakes, the amount of protein is preserved, only digestibility and the activity of some amino acids may decrease partially. There is no harm in making pancakes with cream of rice + egg + pea protein for health; however, if maximum benefit is targeted, it is recommended not to cook at very high heat and for a long time. Cooking on medium-low heat minimizes this effect. For the highest efficiency, it is ideal to consume the product without cooking, mixing it with water or milk. If consumption is by heat treatment, it may be preferred more for taste and practicality.
