Tarhana, which is thought to have been brought by nomadic turks from central asia to anatolia, is prepared in kahramanmaraş using a local method. The tradition of the neighboring ladies gathering together in the early morning hours to spread tarhana in the imece style is gradually disappearing from the cultural fabric of the city. In the production of tarhana chips, first of all, wheat is beaten in a stone mill, the husk is peeled and it is made into “split” or “forged”.
