Carnaroli is a medium-grain rice grown in the Pavia, Novara, and Vercelli provinces of northern Italy.
It keeps its shape better than other forms of rice during slow cooking because of the high amylose content, allowing for a perfect al dente yet smooth risotto texture.
Ingredients include saffron, 6 handfuls of rice, 2 tablespoons of olive oil, 1/2 onion, 1 cup of stock, 2 tablespoons of Parmigiano Reggiano cheese, and 10 g of butter.
