Citric acid is the most versatile and widely used organic acid in food stuff.

It is used as a preservative, emulsifying agent, and as an antioxidant.

Culinary Uses: It is used as a flavoring and firming compound, keeping canned tomatoes firmer in texture and reducing pH levels for sterilization during canning.

It is also used to prevent canned fruits from darkening.

Often referred to as sour salt in cooking.
