Pour a cup of cold water into the coffee pot (kanka). Add one to two heaping teaspoons of medium-roast Hamwi coffee (and sugar to taste).Stir the mixture well while cold until the coffee dissolves completely. Place the kettle over very low heat, and just before it comes to a boil—when the foam (al-wash) rises to the top—remove it from the heat and slowly pour it into the cup to enjoy the pure flavor.
